Traceability

This coffee was produced on Apolonio Canales' El Picacho farm. El Picacho stretches between the Intibucá and Montecillos regions, intersected by the municipality of Masaguara. Apolonio initially worked in construction before investing in his own farm.

With 8 hectares of land, he grows Red Catuai, Lempira, and, more recently, Bourbon. Upon learning of the higher prices being paid on neighboring farms, he joined a program with these producers. He modernized his farm by installing a parabolic dryer, improving storage facilities, and focusing exclusively on harvesting ripe cherries.

Apolonio expressed his gratitude for being selected to sell his coffee in Norway and is committed to continuing to improve its quality. He notes that his goal is:
“to continue selling my coffee every year and maintain its excellent quality for those who enjoy it.”

A very sweet and rounded natural from the El Picacho estate in Honduras—a perfect espresso! This multi-layered coffee has a dense profile, with notes of cranberries, dates, and milk chocolate.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
