Gregorys Coffee Aeropress Recipe
Maciej tells me that they change the recipe according to the different coffees, but the house recipe is the standard they use in all the shops. He developed it in conjunction with Bailey Arnold, the Director of Education for Gregory's Coffee. Here's the recipe: recipe:

Dosage: 15 g

Water: 8 oz/227 g

Extraction time 2 minutes

Method: Inverted

Preheat the Aeropress, place a paper filter in the portafilter and grab a kettle of water, a stirrer and a container into which you press the coffee.
Grind your coffee to a medium/medium-fine grind (since it's hard to describe, think a slightly finer grind than for a dripper or V60).
Prepare the Aeropress and, using the plastic funnel that comes with the Aeropress, pour the beans into the Aeropress chamber.
Invert your Aeropress so that the plunger is on the bottom and the chamber is on top. If you are using a weight, make sure it is set to 0. (If you don't have a weight, just make sure the Aeropress is under the pressure of the pressure gauge.) circle number 4 before you start pouring the water.) The chamber capacity is approximately 8 oz/227 g minus the volume of the coffee beans.
Heat your water to 200ºF (just before boiling), and pour about half of it into the Aeropress, starting your timer as soon as the water hits the coffee.
Stir the coffee three times, making sure the coffee grounds are soaked in water and the surface is broken.
Pour in the rest of the water, mix again in the same way as before.
Place the lid on the Aeropress as quickly as possible.
Preheat the plastic funnel (the same one you used to measure out the coffee beans), as you will use it to extract the coffee into the container.
When the timer has reached 1 minute and 27 seconds, place the Aeropress into the plastic funnel and apply pressure to the container. Use consistent pressure and try to do this for exactly 30 seconds, for a total extraction time of 2 minutes.
