Meet Edu
Eduardo Talavera is the founder of A Umbral and has been passionate about cycling since 2010, with more than 10 years of experience in competition in various modalities. Graduated in Physical Activity and Sports Sciences from the Polytechnic University of Madrid, he has represented the Madrid team in Spanish championships and the Spanish team in the Gravel World Championship in 2023.
Throughout his career, Eduardo has competed on the track, time trial and road, and has been a guide in a triathlon World Cup. In addition to his competitive experience, he has worked as a technician in the Laboratory of Effort Physiology at INEF in Madrid and has published eight scientific studies in the field of cycling. His career includes work as a coordinator in technical training projects for under-23 cyclists and as a coach at C&R for four years.
Currently, Eduardo is dedicated exclusively to training cyclists in all modalities, from MTB, gravel and road to cycle tourism, helping athletes of all levels to reach their maximum performance.
Edu enjoys a simple, flavorful coffee with low acidity and notes of chocolate and hazelnuts. He prefers to prepare it in the traditional way using an Italian moka pot, grinding the beans fresh just before each cup to preserve their quality.

Moka Tips
Choose good coffee: Use quality ground coffee, preferably with a medium-fine grind. For best results, select fresh beans and adjust the grind to your taste.
Fill the water tank up to the valve: Avoid overfilling to maintain proper pressure. Use filtered water to improve flavor.
Don't press the coffee into the filter: Fill the filter with ground coffee without compressing it. This allows the water to pass through better and extract the flavours in a balanced way.
Low-medium heat: Set the coffee maker to low heat to prevent the coffee from burning. The process will be slower, but the result will be a smoother, more flavorful coffee.
Remove from heat in time: When the gurgling sound starts, remove the coffee maker from the heat. This prevents the coffee from cooking further and becoming bitter.
Stir before serving: Once the coffee is ready, open the lid and stir the contents so that the first and last shots mix, balancing the flavor.
Proper cleaning: Wash the moka pot after each use with hot water, without soap. Soap can leave residue that affects the taste of future preparations.
These steps will help you obtain a more intense, smooth and balanced coffee in each preparation.
