Traceability

Marlon Rojas belongs to the third generation of coffee farmers in his family. From a very young age, he was immersed in the world of coffee and gradually acquired knowledge. He left the farm to continue his studies, both in Colombia and abroad, and upon realizing the potential that coffee growing had in his country, he returned to delve deeper into specialty coffee. He took courses in cupping and roasting, and little by little, he fell even more in love with this rewarding work. Eventually, he began growing high-quality coffees and using natural and special processes to bring his lots to different corners of Colombia. His coffees are characterized by their pure profiles and their distinct sense of terroir.

This special batch of the Bourbon Pasiflora variety first undergoes a 24-hour submerged aerobic fermentation. It is then pulped and undergoes an additional 60-hour anaerobic fermentation in tanks, before proceeding to a slow drying process.







Description

Marlon Rojas' Reserva (Colombia) is a carefully washed Pasiflora Bourbon that shines with its lightness and juiciness. The nose displays intense aromas of tropical fruits—ripe mango, juicy peach, and vibrant passion fruit—while the palate reveals balanced acidity and a delicate body that culminates in a clean and refreshing finish. Perfect for filtering, its festive and fresh profile lightens any heavy meal, offering a flavorful and memorable experience with every sip.

Recipes

STEP 1
To arms, soldier!

STEP 2
First, fold the side of the paper filter so that it fits snugly inside your V60. Pour hot water over the filter, soaking it thoroughly to remove papery flavors and allow the ceramic and carafe to warm up.

STEP 3
Pour off the water from the jug. Weigh and grind 12g of coffee and place them evenly into the V60. It's time to tare your scale with the jug and V60 on top.

STEP 4
Start the stopwatch and pour the first 50g of water at 94ºC slowly and evenly, trying to wet all the coffee. This first step is known as “Blooming”.

STEP 5
At 0:30, pour in the next 50g of water in a slow, circular motion and pour in the last 100g again when your stopwatch reads 01:00.

STEP 6
The total time for this recipe should be around 2:00. If the time is shorter, you should try grinding your coffee finer, and if it is longer, try grinding it coarser.
