MONARCH
Monarch is one of two blends we recreate throughout the year, designed specifically for espresso. It is the darker, more chocolatey counterpart to Geometry Blend. We were looking for an espresso that would work well with higher amounts of milk and represent a more traditional style.
Monarch is intense and bold, excelling in drinks with more than 12 oz of milk. As a straight espresso or in milk, it exhibits intense caramelization of sugars, leading the fruity notes toward caramel, brown sugar, and chocolate. For this blend, we use a combination of naturally processed coffees from Ethiopia and washed coffees from Latin America, highlighting its sweetness and complexity. In the cup, you'll find bitter dark chocolate, tart red wine sweetness, molasses, and a hint of dried red fruits. Its texture is dense and velvety, with a great body.
Focus on the Mix
Unlike other brands, at Onyx we first define the ideal flavor profile and then select the coffees that best express it. For Monarch, we look for notes of dark chocolate, red wine, molasses, and orange peel. The blend is refreshed every 3-4 months with fresh, seasonal coffees, always ensuring the highest quality.
Currently, Monarch is comprised of Familia Macias' Colombia La Ceja #1 and Ethiopia Shoondisha G1 Natural. It is used as a house espresso in all of our Labs and is ideal for both single espresso and more developed drip methods.

This blend embodies elegance and balance, living up to its name.
