Traceability

Klasik Beans is a cooperative founded in 2008 by a group of producers from Puntang (Java). This small cooperative shares a philosophy very similar to that of Belco, from a qualitative, human and environmental point of view. The cooperative's goal is to preserve Indonesian cultural heritage by creating sustainable, ecological and fair trade coffees. Production must respect good agricultural practices (currently production is almost ecological and completely shaded)

Description

Process:
Historically, Indonesia has processed its coffees using the wet husk method. In the last two years there has been a push to employ a greater variety of processing techniques, including natural processing. Eko Purnomowidi, who runs Klasik Beans, has put the infrastructure in place at the mills to allow them to employ this process. The Klasik Beans collective prioritizes the environment in all phases of its cultivation. All their coffee is grown exclusively in the shade, under the canopy of a polyculture of healthy trees.

Cup

Sourced from the Sunda region of Java, this naturally processed batch is packed with exotic flavor. The Indonesian highlands have a 300-year history of coffee production, this area of ​​Indonesia offers an almost century-old variety of Typica, with a totally unique flavor.

The processing of good natural coffees is rare in Indonesia and the profile of this cup is really exciting: Notes of passion fruit, cinnamon and cane sugar come through immediately. As it cools, flavors of sweet plum and raisin appear. A subtle acidity balances this coffee with a velvety mouthfeel and lemon curd finish.
