Huila produces more specialty coffee than any other Colombian department — and Bellavista is rooted in its southern heartland. The region's volcanic soils, bimodal rainfall cycle, and elevations above 1,500 metres create ideal conditions for slow-maturing cherries with concentrated sugars and complex acidity. Smallholder farmers here average just 1.5 hectares, meaning every lot is a direct reflection of one family's hands-on dedication to quality.
Edilberto's Bellavista farm is exactly this kind of operation — a small plot maintained with care, processed cleanly, and named for the striking mountain views that surround it. This is traditional Colombian specialty at its most authentic: no co-ferments, no exotic varieties, just excellent terroir and precise washed processing.
The Washed Process
Bellavista is processed using the classic Colombian washed method: selective cherry harvest, same-day depulping, fermentation in concrete or tile tanks for 12–24 hours, clean washing, and drying on raised beds or covered patios. This process is the backbone of Huila's Cup of Excellence tradition — favouring clarity, clean acidity, and the honest expression of variety and altitude over post-harvest flavour manipulation.
