Negusse Debela: From IT to World-Class Coffee
Negusse Debela was known in Ethiopia as a computer guy — running a successful computer parts import company when his career trajectory changed during a trip to Minnesota, USA. At a café there, he tasted a pour-over that gave him what he describes as an epiphany about the potential of Ethiopian coffee. He returned home, toured coffee processing sites throughout southern Ethiopia to understand farming and processing, and set out to build SNAP Specialty Coffee into one of the highest-quality exporters in the country.
SNAP finished its own export dry mill in early 2019, giving Negusse full control of his supply chain from cherry delivery through green bean export. The company now operates processing sites in Nensebo, Yirgacheffe, Guji, and Gedeb — the four most prestigious producing areas in Ethiopian specialty coffee. The Danche site, opened in 2019 after Negusse bought a second washing station in the Danche sub-area of Worka Chelbessa, was the expansion that completed his Gedeo Zone presence.
Danche: The Place
Danche is a small sub-kebele (village community) of Worka Chelbessa — the southernmost part of the Gedeo region, and for the last decade, one of the most celebrated areas for specialty coffee production in Ethiopia. Coffees from Worka Chelbessa's various sub-areas have produced outstanding lots across multiple seasons, consistently noted for their intense florality, citric brightness, and clean juicy character. Danche sits at 1,900–2,200 metres above sea level in a dense semi-forest landscape — coffee grows in the shade of native trees, including the enset (false banana) that is the community's staple food crop. The Gedeo people manage this land through a traditional agroforestry approach that has maintained forest cover while supporting coffee farming for generations.
The Process: Underwater Fermentation
The Danche station uses the traditional Ethiopian underwater fermentation method. After delivery and initial sorting, cherries are depulped and placed in fermentation tanks fully submerged in clean water for 36–48 hours. The underwater environment is gentler than open-air fermentation — less contact with airborne microorganisms — producing a cleaner fermentation that preserves the floral and citric aromatics that make Gedeb washed coffees famous globally. After fermentation, parchment is dried on raised beds for 10–14 days until reaching target moisture.
Yirgacheffe and Gedeo: The Regional Context
Yirgacheffe is the world's most famous coffee town, and its name has become shorthand for a specific cup character: floral, citric, tea-like, clean. But "Yirgacheffe" as a specialty designation actually covers the entire Gedeo Zone — encompassing the woredas of Yirgacheffe town itself, Kochere, Konga, and Gedeb. Gedeb is the southernmost of these, sitting at higher altitude and producing coffees with even more intense florality and complexity than Yirgacheffe town itself. In recent years, roasters who know the area well have increasingly sought Gedeb-specific lots for precisely this reason.
