Java: A Variety With a 500-Year Journey

The Java variety has one of the most historically rich provenance stories in coffee. It originated in Ethiopia (as all arabica does), spread through Yemen where it was cultivated as one of the first commercially traded coffees, and was then transported by the Dutch to the island of Java in Indonesia in the 17th century — giving its name to coffee in popular culture ("a cup of java"). The variety was maintained on Java for centuries and eventually distributed through CATIE in Costa Rica to coffee research programmes around the world.

In Colombia, Java has been adopted by forward-thinking producers including Jhoan Vergara at Finca Las Flores. Vergara processes Java with his signature thermal shock method — anaerobic fermentation followed by alternating hot and cold water rinses — which Black & White Coffee describe as producing "a certified berry BOMB: strawberries, blueberries, and raspberries" when hot, evolving through citrus and lemon verbena as it cools to a clean, craft chocolate character. Hundred House Coffee (UK) describe their Las Flores Java as showing intense berry and citrus from the anaerobic fermentation with exceptional clarity from the thermal shock arrest.
