The Spiced Melony lot captures one of El Vergel's most distinct sensory directions: a Yellow Bourbon natural that leads with ripe tropical fruit and then reveals a warm, spiced booziness that sets it apart from purely sweet or purely fruity coffees. The name reflects the cup experience precisely — watermelon bubblegum warmth alongside a rum-and-spice complexity that emerges especially at cooler temperatures.

Yellow Bourbon is one of Bourbon's most elegant mutations — a natural colour variant of the traditional red-fruited Bourbon that was first documented in Brazil and has been adopted across Latin America for its clean sweetness and rounded body. At El Vergel's 1,500-metre plots, surrounded by the microclimate of the Nevado del Ruiz volcano, Yellow Bourbon develops slower than at lower elevations, building the sugar concentration that the Bayters' anaerobic natural process then amplifies and transforms.

Yellow Bourbon: The Variety

Yellow Bourbon emerged as a natural genetic mutation of Red Bourbon, producing yellow-hued cherries at full ripeness rather than the standard red. The mutation was first formally documented in Brazil in the late 19th century at the Instituto Agronômico de Campinas, where it was identified as a stable, distinct genotype. It spread through Brazil and into Colombia and other Latin American countries through commercial seed distribution and informal variety exchange. In the cup, Yellow Bourbon tends toward sweetness and body over the sharp acidity of some Red Bourbon expressions — a profile well-suited to natural processing, which intensifies sweetness further. At El Vergel, the Bayters planted Yellow Bourbon alongside Red Bourbon, Gesha, Java, Pacamara, Laurina, and other specialty varieties in 2016 under the guidance of coffee specialist Miguel Jimenez.

The Process: Natural Anaerobic

  1. Selective harvest at full maturity with cherry Brix measured to confirm sugar concentration.
  2. Cherries placed in sealed stainless steel tanks for 48 hours of anaerobic fermentation. pH and temperature monitored throughout.
  3. Sun drying for 8 days in mechanical silos — initial phase, allows microbial activity to continue and surface moisture to drop.
  4. 35-day stabilisation in GrainPro bags before milling — an extended rest that homogenises moisture throughout the parchment layer and integrates the fermentation-derived flavour complexity into the bean structure.
  5. Milling and export through Forest Coffee.

The 35-day stabilisation period is one of El Vergel's most distinctive post-drying protocols. While many producers rest coffee for 7–14 days before milling, the Bayters' extended rest allows complete moisture equilibration and produces a more integrated, less volatile cup — the "spiced booziness" reads as warmth and complexity rather than sharp fermentation edge.

El Vergel's Natural Processing Philosophy

El Vergel's natural lots — including the Spiced Melony — represent the farm's most accessible entry point for specialty drinkers accustomed to fruit-forward coffees. Compared to the Koji lots (which introduce umami complexity) or the Mosto anaerobic lots (which use fermentation lixiviates for added intensity), the natural anaerobic process allows the variety's inherent character to lead, amplified by controlled oxygen-free fermentation. The 48-hour duration is calibrated to the Yellow Bourbon's sugar level — long enough to develop tropical fruit intensity without tipping into the excessive funkiness that over-fermented naturals can produce.
