The Gasca Brothers and Finca Zarza

The Gasca Brothers run Finca Zarza in Huila — a farm whose name (zarza = blackberry bramble in Spanish) reflects both the rugged landscape and the berry-forward cup profiles the farm has become known for. Like El Diviso and Las Flores, Zarza has built its reputation on a combination of rare variety cultivation, innovative fermentation protocols, and a direct relationship with international specialty buyers through Lohas Beans. The farm grows a portfolio of Colombian and Ethiopian-heritage varieties, processed with the same multi-stage anaerobic and thermal shock techniques that distinguish its neighbouring farms.
