Zarza: The Third Member of Colombia's Most Celebrated Specialty Trinity

Lohas Beans' 'holy trinity' — El Diviso (Nestor Lasso), Las Flores (Jhoan Vergara), and Zarza (Gasca Brothers) — represents the pinnacle of Colombia's new generation of specialty producers. Zarza is the least internationally profiled of the three, and perhaps the most exciting discovery on BrewFusion's catalogue.

The Holy Trinity: Colombia's New Wave

The specialty coffee world has recently converged on three Colombian farms as representing the country's most exciting new wave of production. Black & White Coffee Roasters, Lohas Beans, and multiple EU specialty buyers have independently described the trio of El Diviso (Nestor Lasso), Las Flores (Jhoan Vergara), and Zarza (Gasca Brothers) as a "holy trinity" — three farms within the same regional network, sharing agronomic knowledge and processing philosophy, each producing competition-grade lots that attract the world's most demanding buyers. For full context on El Diviso see Blog #33; for Las Flores see Blog #34.

The Gasca Brothers and Finca Zarza

The Gasca Brothers run Finca Zarza in Huila — a farm whose name (zarza = blackberry bramble in Spanish) reflects both the rugged landscape and the berry-forward cup profiles the farm has become known for. Like El Diviso and Las Flores, Zarza has built its reputation on a combination of rare variety cultivation, innovative fermentation protocols, and a direct relationship with international specialty buyers through Lohas Beans. The farm grows a portfolio of Colombian and Ethiopian-heritage varieties, processed with the same multi-stage anaerobic and thermal shock techniques that distinguish its neighbouring farms.
