Juan Peña es uno de los productores más reconocidos de Ecuador y Hacienda La Papaya se ha convertido en una referencia mundial por su enfoque científico y obsesión por la calidad.
Cultivado a 2000 msnm en Saraguro (Loja), este lote de Mejorado representa una de las expresiones más elegantes de esta variedad ecuatoriana. La combinación de altitud extrema, manejo técnico y procesamiento preciso da lugar a una taza limpia, floral y profundamente compleja.
El resultado es un café brillante y refinado, con una estructura delicada y una claridad excepcional.

Procesado mediante método washed, enfocado en pureza y precisión:
Recolección selectiva de cerezas maduras
Selección por flotación
Despulpado inmediato
Fermentación sumergida (~15h)
Lavado completo
Secado en camas elevadas (10–18 días)
Este proceso resalta la elegancia natural de la variedad Mejorado.
