Guji coffees were historically classified as Sidama under the Ethiopian Commodity Exchange system, but the zone has been increasingly recognised as a distinct and prestigious origin over the last decade. The rich soils of Benti Nenka provide ideal conditions for coffee cultivation, combining volcanic mineral richness with the dense organic matter of the surrounding forest ecosystem.
The Process: Cold Tank Anaerobic
Benti Nenka's anaerobic process is distinctive: the ripest hand-picked cherries are placed in cold fermentation tanks with no oxygen for 7–10 days. The cold temperature slows the fermentation rate, allowing the anaerobic microbial population to build aromatic precursors over a longer period than room-temperature anaerobic protocols produce. The result is a more controlled, less volatile fermentation that produces the vivid fruit and honey character without the sharp or alcoholic notes that poorly managed naturals can develop. After fermentation, cherries are rinsed and dried on shaded raised beds until reaching 10–11% moisture.
