Chiroso — named for the elongated, narrow shape of its cherries — is an Ethiopian landrace variety identified in Colombia's Antioquia and Huila regions. It belongs to the same Ethiopian-heritage family as Ombligon (Blog #3), Wush Wush (Blog #43), and Pink Bourbon: varieties whose genetic lineage traces back to Ethiopia's wild arabica forests and whose cup profiles share a distinctive delicate complexity that sets them apart from traditional Colombian cultivars like Castillo or Caturra.
Hydrangea Coffee Roasters, one of the US buyers with deep Colombian Chiroso experience, describes Diego Vergara's Las Flores Chiroso (sister farm to Jhoan Vergara's Las Flores, Blog #34) as delivering "marmalade, passionfruit, pineapple" — a tropical fruit profile with a bright, clean acidity that washed processing preserves exceptionally well. The variety is low-yielding and sensitive, making commercially available Chiroso lots genuinely scarce.
