The Colombia Variety: Underrated and Excellent
Developed by Cenicafé in the 1980s as Colombia's response to coffee leaf rust, the Colombia variety is a complex hybrid of Timor Hybrid genetics for resistance and traditional Colombian cultivars for cup quality. At high altitude — 1,600+ metres — in volcanic Huila soils with selective harvesting and controlled washed processing, it consistently scores 85+ specialty points. Clean caramel-sweet profile with bright citric acidity: the honest backbone of Colombian specialty. The Coffee Quest uses Castillo/Colombia variety smallholder lots for their Los Patios co-ferments (Blog #19), proving that with the right processing, this variety competes.
