Tierrita: The Natural Counterpart to El Placer Washed

El Placer Farms produces two distinct expressions from the same land. The Washed (Blog #40) is bright, citric, and clean — the terroir expressed through clarity. Tierrita is the inverse: a natural lot where the cherry's sugars and the farm's volcanic earth character are brought forward together, producing a darker, richer, more textured cup. The name tierrita — diminutive of tierra, earth — is both literal and poetic. It references the volcanic soils that give the lot its distinctive mineral depth, and positions the coffee as an expression of the land rather than the process.

Natural Processing: The Earth Amplified

In natural processing, coffee cherries are dried whole — the fruit pulp remains intact around the seed for the full drying period, typically 15–25 days on raised beds. As the cherry dehydrates, its sugars ferment and migrate into the bean, leaving behind the concentrated fruit and earthy characteristics that define natural coffees. At El Placer's altitude, where the temperature differential between day and night slows drying, this process produces a particularly rich and complex result — volcanic minerals from the soil interacting with fruit sugars to create the deep, layered character the Tierrita name captures.
