Indonesia Coffee: The Fourth-Largest Producer and the World's Most Distinctive Processing Method
Indonesia produces approximately 12 million bags annually — 6.8% of global supply — making it the world's fourth-largest producer. It gave coffee its most famous nickname ('java'), pioneered the wet-hulled giling basah process that produces the most recognisably distinctive cup profile in world coffee, and grows its Arabica across some of the most remote and biodiverse terrain on earth.

The Country That Named Coffee 'Java'
Indonesia's connection to coffee history is fundamental. When the Dutch East India Company (VOC) broke Yemen's two-century coffee trade monopoly in the early 17th century by transplanting arabica trees from Yemen to their Java colony, the island's name became so associated with coffee in the English-speaking world that "java" became a generic synonym for the beverage. For two centuries, the island of Java was the world's primary commercial coffee source outside Arabia. Today, while Sumatra has overtaken Java as Indonesia's primary Arabica-producing region, the historical naming legacy persists in every morning cup referred to as "java" anywhere in the world.
Indonesia is the world's fourth-largest coffee producer, generating approximately 700,000 metric tons annually — equivalent to roughly 12 million 60-kg bags. Approximately two-thirds of this is Robusta (Coffea canephora), grown in lower-altitude regions across Java, Sumatra, Sulawesi, and smaller islands, and used primarily in commercial espresso blends and instant coffee. The remaining one-third is Arabica, concentrated in the highland regions of Sumatra (Gayo, Lintong, Mandheling), Sulawesi (Toraja), Java (PTPN government estates), Flores (Bajawa), and Papua (Baliem Valley).
Dutch Colonial Coffee: How Java Became the World's Supply
The Dutch East India Company (VOC) established its first coffee plantation on Java in 1696, using seeds brought from Yemen via their network of colonial administrators. The Java plantation model — large estates managed by Dutch colonists using local forced labour — proved commercially successful and was rapidly expanded. By the early 18th century, Java was exporting sufficient coffee to sustain European demand after Yemen's export capacity declined. The VOC transported coffee plants from Java to its Suriname colony in 1718; from Suriname, a plant was gifted to France, and a cutting from that plant was carried to Martinique in 1720 — from which most Latin American Arabica descends.
The Dutch colonial coffee industry in Indonesia operated through forced cultivation (cultuurstelsel system, 1830–1870) that required Javanese farmers to devote one-fifth of their agricultural land to government-specified export crops, primarily coffee. The system generated enormous profits for the Netherlands — funding infrastructure investment and public works across the country — while exploiting Indonesian farmers systematically. Coffee production was central to Dutch colonial extraction in Indonesia for over two centuries.
Giling Basah: The Wet-Hulled Process
Indonesia is the only country where the wet-hulled (giling basah — "wet milling" in Bahasa Indonesia) process is commercially standard for Arabica. In standard washed processing, coffee parchment dries to approximately 10–12% moisture before the outer hull is removed in milling. In giling basah, the parchment is removed while the bean still has 25–35% moisture — while the seed is still relatively soft and structurally unstable. The hulled bean then undergoes a second drying phase, exposing the seed interior directly to the environment.
This process produces distinctive visual and flavour results. Indonesian green coffee beans are blue-green in colour — not the typical grey-green of standard green coffee — a result of the enzymatic and oxidative reactions that occur when the soft, high-moisture bean is exposed to air during the second drying phase. The flavour result is equally distinctive: the earthy, cedar, tobacco, and dark chocolate notes that define Sumatran coffee's profile are direct products of giling basah. The process produces very low acidity — the high-moisture hulling phase allows enzymes to degrade the organic acids that produce acidity in standard washed coffees — and a particularly full, heavy body.
Why Sumatran Coffee Tastes Like Sumatran Coffee
The combination of giling basah processing, the Typica and Catimor varieties grown in Sumatra's volcanic soils, and the specific terroir of the Gayo highlands produces one of the world's most immediately recognisable cup profiles. "Sumatran coffee" — earthy, cedar, tobacco, dark chocolate, very full body, almost no acidity — is a category of cup character unlike anything produced by any other process in any other growing region.
This profile is deeply polarising in the specialty coffee world. Specialty buyers trained on the bright, clean, acidic profiles of Ethiopian washed, Kenyan SL28/SL34, or Colombian Bourbon sometimes find Sumatran coffee too heavy, too earthy, too rustic. Buyers who love it — and there are many — appreciate precisely the qualities that others reject: the weight, the earthiness, the tobacco complexity, the way it fills the palate and lingers. For espresso blending, Sumatran Arabica provides body and sweetness that lighter-roasted single-origin coffees cannot contribute to a blend.
Specialty Innovation: Washed Sumatran and Sulawesi
Some Sumatran producers and exporters have begun producing fully washed or semi-washed lots that bypass giling basah entirely — producing a cleaner, brighter cup that reveals the Gayo terroir without the process-imposed character. These washed Gayo lots are significantly different from conventional Sumatran coffee and are beginning to attract specialty buyers who want to understand the terroir beneath the processing. Sulawesi's Toraja region produces both giling basah and some washed lots that show the spice, caramel, and dark fruit character of the volcanic highland soils with more clarity than Sumatran lots allow.
