Aarhus, 2012: A Small Shop With an Enormous Idea
Esben Piper opened La Cabra in 2012 as a small specialty coffee bar in Aarhus — Denmark's second city, a university town with a creative scene and a population that was just beginning to encounter the ideas that the Nordic coffee revolution was generating in Oslo and Copenhagen. The idea was simple to state and difficult to execute: focus entirely on quality, transparency, and the experience of coffee as it truly is, rather than as convention has always served it.
The name La Cabra — Spanish for goat — was inspired by a sketch by Picasso. Piper has the same Picasso goat tattooed on his shoulder. "I know it's a bit confusing with a Spanish name and a Danish guy," he has said. "It's okay if people don't get it." The name was never about legibility. It was about identity — a marker for a business that intended to do things its own way, build its own philosophy, and let the coffee speak.
A year after opening, Piper and head roaster Mikkel Selmer began sourcing and roasting their own coffee. Their approach from day one was to roast for the cupping table — to develop a profile by tasting, not by measurement alone, and to find the point at which the coffee tasted best rather than the point where convention said it should stop. "So from day one our approach has been to roast for the cupping table, and this has been our philosophy ever since," Piper has explained. "And then it's the headache of the barista to extract it well and make it taste beautiful and balanced."
Brighter Is Better: A Philosophy, Not a Trend
La Cabra's roasting manifesto — Brighter Is Better — is more than a slogan. It is a complete statement about what coffee is and what roasting should do. Darker roasting, in La Cabra's framework, obscures origin-specific flavour notes that are inherent to the coffee's genetics, terroir, and processing. The caramel, chocolate, and roast-derived flavours that define darker roasted coffee are real and pleasant — but they are the flavour of heat applied to coffee, not the flavour of the specific farm, variety, or harvest. La Cabra's light roast is an act of removal: removing the roaster's imposition so that the coffee itself can be heard.
The practical expression of this philosophy is La Cabra's most structurally unusual decision: a single roast profile for all brew methods. Unlike most roasters who develop separate profiles for filter coffee and espresso — accounting for the different extraction pressures, temperatures, and contact times — La Cabra applies one roast to all uses. The profile is decided at the cupping table, where it tastes best. It is then the barista's responsibility to extract it well for whatever method is being used. This is demanding — it requires baristas who understand their equipment deeply enough to make a single roast perform across radically different brew contexts — but it produces a consistency of quality and philosophy that distinguishes La Cabra from almost every other roaster at its level.

La Cabra grew from a single Aarhus café into an organisation of approximately 400 people operating across multiple countries. The Copenhagen roastery came next, followed by New York (East Village, SoHo, and Bushwick locations), Bangkok, and Oman. Distribution now reaches more than 60 countries. The bakery — a natural extension of the same quality philosophy applied to bread and pastry — has become as celebrated as the coffee. La Cabra's long-fermented loaves and cardamom buns have been praised by New York food writers with the same language as their Gesha lots.
Through all of this growth, Piper has maintained the same analytical obsession that drove the founding. "I always have a number," he has said. "It's not to reduce it, but even in my spare time, I always have a number." Every sensory experience — every cup of coffee, every bread — is assigned a silent internal score. It is not a cold system. It is the discipline of someone for whom quality is not a policy but a compulsion.
Hacienda San Isidro: La Cabra's Most Famous Sourcing Partnership
La Cabra's relationship with Hacienda San Isidro — Johel and Matías Monge's farm in Copey, Dota, Tarrazú, Costa Rica — is one of the most celebrated roaster-producer partnerships in the specialty coffee world. Hacienda San Isidro has placed in the top 10 at the Costa Rica Cup of Excellence in all seven years the farm has entered. In 2023, Matías Monge's Gesha lot secured first place — the highest honour in Costa Rican specialty coffee. La Cabra is the primary roaster for these lots, and the farm's global recognition has been built in part through the platform and attention La Cabra's name and distribution provide.
The partnership is the clearest demonstration of La Cabra's sourcing philosophy: long-term, direct relationships with progressive producers who share the ambition to push quality as far as it can go.
