Los Nogales: Named for Its Shade Trees
Finca Los Nogales takes its name from the walnut trees (nogales) that provide shade across its coffee plantings — a traditional agroforestry feature of Colombian highland farms that regulates temperature, contributes organic matter to the soil, and supports the biodiversity that specialty-focused producers increasingly protect. The shade environment at Los Nogales creates the cool, humid conditions that allow slow cherry maturation and the development of complex sugars that Benitez's processing protocols can then amplify.
Oscar Hernández and the Granja Paraíso 92 Network
Oscar Hernández is a partner producer in the Granja Paraíso 92 network, contributing cherries from his La Macarena farm for processing through Wilton Benitez's precision protocols (see Blog #55 for the full Granja Paraíso 92 / Wilton Benitez story). This partnership model — where a farmer grows with the same care as any independent producer but accesses a partner's processing infrastructure — represents one of the more effective models in Colombian specialty for bringing smallholder lots to international quality standards without the capital cost of building a full processing facility independently.
Los Nogales lots processed through the Granja Paraíso 92 system share the same ozone sterilisation, double anaerobic fermentation, and thermal shock protocols that define Benitez's approach — but carry the distinct terroir character of Oscar's Cauca plots.
