Lychee is botanically classified as Litchi chinensis, a subtropical fruit native to the Guangdong province of China that produces fruit with a distinctive floral-sweet aroma dominated by geraniol and rose oxide — compounds that give lychee its unique combination of floral perfume and sweet, slightly acidic flesh. These same compounds — geraniol in particular — are among the most valued aromatics in specialty coffee, especially in Gesha varieties and high-altitude Ethiopian coffees. When lychee's microbiome and aromatic precursors are introduced into a controlled carbonic maceration fermentation, the result amplifies these floral-sweet characteristics in the coffee's own structure rather than simply adding a flavour coating.

The Full La Luisa Context
Finca La Luisa's 70-hectare estate in Ciudad Bolívar has been producing fruit co-fermented lots for approximately two years, building on an earlier carbonic maceration programme that began four years ago. Juan Pablo Vélez developed the fruit juice infusion method to produce "remarkably defined and consistent profiles" while expanding the range of flavours the farm could offer. The methodology — double carbonic maceration with a second fruit-infusion fermentation — is consistent across all lots; what varies is the fruit used and therefore the aromatic signature of each release. Lychee Candy is the most floral and exotic; Strawberry Cream is the richest and most dessert-like; Poppy Soda is the most effervescent and botanical.

About The Coffee Quest
The Coffee Quest (TCQ) is a Netherlands-based specialty green coffee importer founded in 2010, widely regarded as one of the most transparent and quality-focused importing companies in the industry. They source exclusively from Colombia, working directly with smallholder producers across the country and are known for their deep, multi-year relationships with specific farms — including Finca El Diviso (Nestor Lasso), Finca El Paraíso (Diego Bermúdez), and dozens of others.
Los Patios in La Plata, Huila, is TCQ's processing headquarters — a centralised facility where the company's R&D team develops new processing protocols, runs controlled fermentation experiments, and processes coffees from partner smallholders who deliver wet parchment after completing the first stage of fermentation on their own farms. It functions as a shared processing resource for smallholders who lack the infrastructure to run advanced fermentation protocols independently.
Bright Yellow: A Milestone for The Coffee Quest
Bright Yellow is explicitly described by The Coffee Quest as "our first successful co-fermentation process" — a milestone for an importer that has long championed transparency and quality but had not previously entered the co-ferment market. The decision to develop it at Los Patios rather than outsourcing to a producer reflects TCQ's philosophy: if they're going to recommend and sell co-fermented coffees, they want to understand the process from the inside.
The development was led by TCQ's R&D team and aimed to "elevate the traditional and chocolaty profile of Colombia with a touch of sweet peach notes" — taking the region's standard-quality Castillo and field blend coffees and using co-fermentation to create a cup that stands alongside the premium experimental lots from individual star producers, but at a more accessible price point and consistent volume.
The Smallholder Network: Los Patios as a Community Hub
The partner farms feeding Bright Yellow are smallholders in the La Plata area of Huila, each averaging just 3 hectares. Many of these farms produce Castillo — Colombia's most widely planted rust-resistant variety — alongside other field blend varieties. Individually, these lots would be too small and too conventionally processed to command specialty premiums. By routing their wet parchment through Los Patios after a first fermentation stage on the farm, they gain access to TCQ's advanced co-fermentation infrastructure and the resulting premium pricing that exceptional cup quality commands.
The Process: Peach Co-Ferment Natural
- Producers handle the first stage: selective cherry harvest and 12 hours of aerobic fermentation in cherry at the farm level.
- Depulped wet parchment delivered to Los Patios processing centre in La Plata.
- TCQ R&D team adds commercial peach concentrate plus their own proprietary solution to the depulped coffee. The focus at this stage is precursor transfer — peach's aromatic compounds and microbiome integrate with the coffee's fermenting substrate. This phase lasts approximately 48 hours.
- Coffee drained and transferred to drying beds at Los Patios. Monitored and rotated constantly for 12–16 days to ensure even drying and embryo preservation — one of TCQ's stated key quality goals.
