Natural Process Coffee: Why Sun-Dried Coffee Tastes Like Fruit, and What Happens When You Go Further
Natural processing is the oldest coffee processing method on earth and, in the hands of the right producer, produces some of the most extraordinary cups in specialty coffee. Understanding how it works — and the spectrum from classic sun-dried Ethiopia to cold-tank anaerobic Guji — changes how you taste every natural you drink.
What Natural Processing Actually Is
Every cup of coffee begins as a fruit. The coffee cherry — the red or yellow fruit that grows on coffee trees — contains the seed we call a coffee bean, surrounded by layers of fruit flesh and a sticky, sugary coating called mucilage. Processing is the method by which that seed is separated from the fruit and dried to the moisture level (approximately 10–11%) at which it can be stored and exported without degrading.
In washed (or wet) processing, the cherry is immediately depulped — the fruit flesh is removed mechanically — and the parchment-covered seed is fermented in water tanks to break down any remaining mucilage before being washed clean and dried. The fruit's sugars and flavour compounds have minimal contact with the bean. The cup is clean, bright, and transparent: you taste the bean's genetics and terroir directly.
In natural (or dry) processing, the cherry is dried whole — no depulping, no washing, no fermentation tanks. The entire fruit — skin, flesh, mucilage — remains intact around the seed for the duration of the drying period, typically 15–30 days on raised beds or drying patios. As the cherry dehydrates, the fruit's sugars ferment slowly, and the flavour compounds from the fruit's flesh migrate into the bean's structure. The cup carries those fruit-derived compounds as tasting notes: blueberry, strawberry, mango, chocolate, wine-like depth.
Natural processing is not a modern invention. It is the original processing method — how coffee was processed in Ethiopia and Yemen before the wet process was developed in the 18th century. Brazil, Ethiopia, and Yemen have been producing naturally processed coffees for centuries. What has changed in the last decade is the precision and intentionality with which producers now manage the natural process to produce specific, predictable cup profiles rather than accepting variability as inherent to the method.
Why Natural Coffees Taste the Way They Do
The fruit-forward character of natural coffees is not flavouring — it is not the result of adding anything to the coffee. It is the direct product of fermentation: the microbial activity that occurs naturally within the cherry during drying, converting sugars into aromatic compounds that migrate into the bean. The specific organisms involved (yeasts, bacteria, wild microflora present on the cherry's surface), the temperature and humidity of the drying environment, the altitude, and the duration of drying all influence which aromatic compounds develop and in what concentrations.

The Natural Processing Spectrum
Classic Sun-Dried Natural (Ethiopia, Brazil)
The original model: cherries spread on raised beds or concrete patios, dried by the sun for 15–30 days, turned regularly to ensure even moisture loss and prevent mould. Ethiopia's Sidama, Guji, and Gedeo naturals, and Brazil's Minas Gerais naturals, are the global benchmarks for this style. Raised-Bed African Natural vs Concrete Patio Brazilian Natural
The drying surface matters significantly. Raised African beds — mesh platforms elevated above the ground — allow airflow on all sides of the cherry, producing more even, controlled drying than ground-level concrete patios. Brazilian sun-dried coffees on concrete terraces (the traditional model) are turned frequently but dry faster in Brazil's hot, dry climate, producing a distinctive caramel, chocolate, dried-fruit character rather than the vivid fresh-fruit intensity of Ethiopian raised-bed naturals. Neither is superior — they are different expressions of the same broad method, suited to different cup preferences.
Anaerobic Natural
Anaerobic processing seals the coffee — either whole cherries or depulped parchment — in an oxygen-free tank or vessel before or during drying. In the absence of oxygen, the fermentation chemistry changes: different microbial populations (primarily heterofermentative lactic acid bacteria and various yeast strains) produce different aromatic compounds, including higher concentrations of esters associated with tropical fruit, wine-like acids, and floral notes that aerobic fermentation does not generate. The result is more intense, more complex, and often more distinctive — but also more variable if the anaerobic environment is not carefully controlled.
Benti Nenka (BrewFusion Blog #78) from southern Guji Zone is processed through a cold-tank anaerobic protocol: cherries placed in sealed tanks for 7–10 days at cold temperature before raised-bed drying. Yeast-Inoculated Natural
Some producers go further, introducing specific selected yeast cultures into the anaerobic fermentation environment. Rather than relying on the wild microflora naturally present on the cherry's surface, yeast inoculation introduces a controlled microbial population that metabolises the cherry's sugars toward a specific aromatic target. Co-fermentation introduces a fruit concentrate or juice into the fermentation environment alongside the coffee cherry — allowing the coffee's microbial population to metabolise both the cherry's own sugars and the introduced fruit's aromatic compounds simultaneously. How to Brew Natural Coffees
Natural coffees generally benefit from slightly different brewing parameters than washed coffees. The higher sugar content and more complex aromatic profile respond well to slightly lower temperatures (91–95°C rather than 94–97°C for washed) — lower temperatures preserve the fruit character and prevent the aromatic volatiles from dissipating too quickly. A slightly coarser grind and slightly slower pour rate than you would use for the same coffee washed also allows the flavours to integrate more fully before reaching the cup.
All natural coffees benefit from rest after roasting. Fresh-roasted naturals often taste raw and sour — the CO₂ and volatile compounds from fermentation need time to integrate and settle. Standard sun-dried naturals are typically best from 10–21 days post-roast. Cold anaerobic and yeast-fermented naturals often need longer: 14–28 days. The AeroPress and French press suit natural coffees well — both preserve the full body and sweetness that naturals develop through fruit contact.
