A Temporary Installation That Refused to Leave

Prolog Coffee was not planned as a permanent business. In March 2016, Sebastian Quistorff and Jonas Gehl opened a coffee bar in Kødbyen — Copenhagen's Meat Packing District, the Vesterbro neighbourhood that had evolved from industrial slaughterhouse district into one of the city's most creative and culinary-forward areas. The space was conceived as a temporary installation: a short-term project to explore an idea, not a long-term commitment.

The idea was so well received that it never left. Prolog became permanent by the force of its own popularity — customers returning, word spreading through Copenhagen's specialty coffee community, the quality and warmth of the operation building a loyalty that a temporary installation simply couldn't accommodate. From that accidental permanence, Prolog has grown into one of Copenhagen's most respected specialty roasters: multiple bar locations across the city, a roasting operation, wholesale accounts, subscriptions, and a Certified B Corporation status that reflects the seriousness of their commitment to social and environmental responsibility.

Jonas Gehl: Two-Time Danish Barista Champion

Jonas Gehl — one of Prolog's founding owners — is a two-time Danish Barista Champion, winning the title in both 2018 and 2019. The Danish Barista Championship is one of the most competitive national barista competitions in the world, given Denmark's extraordinary density of world-class specialty roasters and the quality of competition baristas the country produces. Winning it twice in consecutive years places Jonas among the most accomplished competitive baristas in Scandinavian specialty coffee history.

The competition pedigree feeds directly into Prolog's approach to coffee quality. Prolog is a Certified B Corporation — one of a relatively small number of specialty coffee roasters globally to achieve this certification. B Corp certification requires a company to meet rigorous standards of social and environmental performance, accountability, and transparency across the full scope of its operations: from how it sources raw materials and treats workers to how it engages its community and manages its environmental footprint. The certification is not self-declared; it is assessed by B Lab, an independent non-profit organisation, through a comprehensive audit process that must be renewed every three years.
