Lukas chose this name for his Göttingen roastery in 2023 deliberately: "Our name reflects the joy, creativity, and imagination we bring to every aspect of our craft. Just as children play and explore in a sandbox, we experiment and innovate to discover new flavors and perfect our roasting techniques."
This is an unusually honest description of what good specialty coffee roasting actually requires. The best roasters are not following a fixed formula; they are experimenting with each new lot — adjusting development time, airflow, charge temperature, and drop time in response to what the green coffee's density, moisture, and structure suggest the optimal profile might be.
