From the mountains of Jutiapa, Guatemala, comes this naturally anaerobic coffee produced at Los Manantiales, a farm founded by Adolfo Pivaral and now managed by his son Ronald Pivaral. The coffee comes from the La Pinada area, shaded primarily by Ocarpa pines and cultivated at 1,800 meters in clay-loam soils of volcanic origin.
The farm operates under a semi-organic system, combining coffee pulp, manure, and slow-release chemical fertilizers to maintain a nutritional balance. Jutiapa's climate, with its well-defined seasons, allows for uniform ripening, consistent flowering, and precise drying.
This batch follows a carefully controlled natural anaerobic process:
— Harvest with cherries at purple ripeness.
— Fermentation in special bags for 96 hours, with stirring every 8 hours.
— Drying on saran in layers of maximum 2 cm: 48 h without moving and then turning every 30 min for 15–18 days.
— Final rest in the cellar before evaluation.
The result is a deep and balanced cup, combining notes of orange, chocolate, cedar, and a touch of wine that reflects the intensity of the brewing process. Ideal for both espresso and filter brewing.
