Description
Wilder Lazo's Sidra is a coffee that strikes the perfect balance between clarity and experimentation.
Produced at La Dinastía (Huila), this lot combines the natural elegance of the Sidra variety with a carefully controlled anaerobic process. Unlike many intense co-ferments, here the fermentation is subtly integrated, allowing the origin and variety to remain the stars.
The result is a floral, clean, and complex coffee, with brilliant acidity and a tea-like structure that evolves depending on how it's prepared.
Process
Processed using anaerobic washed with extended fermentation, this coffee follows a technical protocol:
Selection and flotation of ripe cherries
Anaerobic fermentation in cherry (~60h)
Pulping and additional fermentation (~100h) with natural spices
Light wash, retaining some of the mucilage
Sun drying (~15 days) with humidity control
Stabilization (~30 days)
This process adds complexity without sacrificing cleanliness.
