Why we like it

An uncommon variety with a highly expressive floral and fruity profile. We love the combination of orange blossom, grapefruit, and candied strawberry, along with its syrupy sweetness and balanced acidity. In addition, Fellows Farms is a project that connects high-quality coffees with better opportunities for small Colombian producers.

Who should buy it

Perfect for those who enjoy light-roasted Colombian coffees with floral profiles and sweet fruits and fresh acidity. An excellent choice for lovers of unusual varieties and filter brewing methods seeking a clean, juicy, and complex cup.

Description

From the mountains of Huila and Cauca, Colombia, comes this Ají from Fellows Farms, a project developed by Inmaculada Coffee Farms to work directly with small producers and take their coffees to the next level.

Selected and roasted by Nomad Coffee, this lot stands out for its uncommon variety, careful washed processing, and a sensory profile that combines flowers, citrus fruits, and intense sweetness.

In the cup, we find orange blossom, grapefruit, and candied strawberry, accompanied by raw honey, candied pineapple, and milk chocolate. Its texture is reminiscent of peaches in syrup, while a medium acidity, similar to pineapple, provides freshness and balance.

Origin and Producer

Fellows Farms is an initiative created in 2022 by Inmaculada Coffee Farms, a coffee project founded in 2010 by the Holguín Ramos family in Pichindé, Valle del Cauca, Colombia.

Located in the Andean mountains of Cali, next to the Farallones de Cali Natural Park, Inmaculada has specialized in the production of high-quality coffees and uncommon varieties such as Gesha, Sudan Rume, Laurina, and Eugenioides.

Its crops are grown under an agroforestry system, where coffee coexists with shade trees, without using synthetic fertilizers or agrochemicals.

Through Fellows Farms, Inmaculada collaborates with small producers in Huila and Cauca, purchasing their coffees at premium prices and offering technical support to improve agricultural and harvesting practices.

The project also works with AMCAPEC, an association of women coffee farmers from Tambo, Piendamó, and Caldono, in Cauca.

All Fellows Farms coffees are processed at Finca La Inmaculada, allowing for consistent quality control and full traceability.

Ají Variety

Ají is still an uncommon variety in Colombia, known for its extraordinary floral and fruity potential.

Its history begins at the La Guaca farm in Huila, where José Hernán Salazar and his family identified some trees grown from Caturra seeds that exhibited different characteristics.

After recognizing their potential in the cup, they decided to propagate them and continue developing this variety.

In 2020, one of their lots stood out in Colombia's Cup of Excellence.

Although it is frequently known as Bourbon Ají, genetic analysis indicates that it does not belong to the Bourbon family, but rather has an Ethiopian origin.

Its name comes from the elongated shape and red color of its ripe cherries, similar to an ají pepper.

Washed Process

Cherries from the farms associated with Fellows Farms are received at Finca La Inmaculada, where they undergo a careful selection process.

First, a flotation sorting is performed to remove leaves, stones, and low-density cherries.

Subsequently, electronic sorting identifies cherries with an optimal ripeness level, followed by additional manual sorting.

The selected cherries are pulped, washed, and undergo a controlled drying process.

This method allows the clarity of the sensory profile to be preserved and the natural characteristics of the Ají variety to stand out.

Sensory Profile

A floral, sweet, and fruity cup, with a combination of citrus notes and a syrupy texture.

Orange blossom provides a delicate aromatic expression, while grapefruit introduces a fresh and balanced citrus acidity.

Candied strawberry adds an intense sweetness, accompanied by nuances of raw honey, candied pineapple, and milk chocolate.

Its body is reminiscent of peaches in syrup, with a medium acidity similar to pineapple that keeps the cup juicy and balanced.

Nomad Coffee's light roast is designed to highlight the aromatic complexity, sweetness, and clarity of this coffee in filter brewing methods.
