Description

This Sidra comes from Finca Anaya, a 4.5-hectare family farm located at 1,600 meters in the hills of Acevedo, Huila. Cultivated by the Aranda Gómez family for over 30 years, the farm is surrounded by native trees, bamboo, and fruit trees, creating a biodiverse environment where coffee cherries ripen slowly.

Producer Sergio Darío Aranda Gómez has been working with specialty coffee for over 15 years, continuously refining his fermentation methods and evaluating each batch with remarkable attention to detail. His processing decisions are aimed at developing complexity and intensity while preserving the identity and clarity of each variety.

Sidra is a Colombian variety highly prized for its distinctive aromatics, sweetness, and elegant structure. For this natural lot, only fully ripe cherries were hand-picked and then washed before undergoing an initial oxidation stage. The whole cherries were then anaerobically fermented with wild yeasts for four days at a controlled temperature of 30°C, intensifying the coffee's fruity character and aromatic expression.

After fermentation, the cherries were slowly sun-dried for 15 to 20 days until they reached 10-11% moisture. The coffee was carefully stored and rested, allowing its flavors to fully stabilize and integrate before export.

In the cup, it is a super complex coffee, with great clarity and fruity sweetness, featuring notes of peach, cotton candy, blueberry, and honey.
