The Sidra variety is processed using a carefully structured Advanced Natural process:
- Manual selection of cherries at maximum ripeness
- Initial oxidative phase
- Anaerobic fermentation with wild yeasts at 30 °C for 4 days
- Slow drying in the sun for 15–20 days to 10–11% moisture

The result is a lush, expressive, and perfectly defined cup. The sweetness is intense and juicy, accompanied by a lively, almost effervescent acidity, and an enveloping texture that adds depth.
