Anoxic Washed Pink Bourbon is one of the most precise and elegant expressions of the work of Jorge Elías Rojas, a fourth-generation producer at Finca El Jardín, Planadas (Tolima). Grown at 1,850 meters above sea level and processed using the anoxic washed method, this batch combines cleanliness, structure, and sweetness with a complexity that immediately stands out in the cup.

In this process, the cherries ferment in completely sealed, oxygen-free tanks before being washed and dried. This controlled environment prevents unwanted oxidation and enhances floral aromas, fruity brightness, and a pronounced sweetness.

The result is a precise and refined Pink Bourbon, with notes of white flowers, red fruits and a lively and balanced acidity that reflects the altitude and fresh terroir of Planadas.
