Process
Processed using the washed method, this coffee follows a meticulous approach at every stage:
Manual selection of perfectly ripe cherries
Pulping on the same day of harvest
Fermentation in controlled tanks
Thorough washing to remove mucilage
Slow drying on raised beds inside solar dryers
Temperature control (<40°C) to preserve quality
Stabilization in GrainPro to maintain optimal humidity

About Three Marks Coffee
Three Marks Coffee is a Spanish roastery and cafe located in the sunny city of Barcelona. It is the brainchild of three friends: Marco De Rebotti, Marco Pacca, and Marc Aguyé.
The idea to open their own cafe and roastery first originated in early 2018. Marco De Rebotti and Marc Aguyé had previously worked together at the equally well-known roastery Nømad Coffee. Marco Pacca joined them a little later, at that time working in an office just above Nømad Coffee. Marco now roasts for their own coffee shop and brand, Three Marks Coffee.
