Bekele Anaerobic comes from Murago, Sidama (Ethiopia), grown between 2200 and 2350 meters above sea level by Bekele Karchara. His farm is part of a new wave of production at extreme altitudes, where the thinner air and cooler climate slow down the ripening of the cherry, concentrating sweetness and complexity.
Bekele works alongside more than 75 neighboring producers, using natural methods and traditional tools, without access to electricity or running water. Their approach is based on natural, anaerobic processes with extended drying times, which develops aromatic depth and structure.
Coffee Collective actively collaborates with Bekele to improve grading, extend shade drying, and support its organic certification, thereby increasing direct value for the producer.
In the cup, this Anaerobic Natural is intense and juicy. Notes of ripe grapes, fresh apple, bright bergamot, and tropical pineapple emerge, accompanied by a deep sweetness reminiscent of strawberries and wine caramel. It is expressive, complex, and vibrant.
