Description
Bekele Honey comes from Murago, Sidama (Ethiopia), grown between 2200 and 2350 meters above sea level by Bekele Karchara, one of the producers who are part of the new generation of coffee farming at extreme altitudes.
In this emerging region, the cool climate and fine air slow the ripening of the cherries, resulting in dense cherries with structured sweetness and elegant acidity. Bekele works alongside more than 75 neighboring growers, using traditional methods and a minimal-impact approach, without access to electricity or running water.
The Honey process allows some of the mucilage to remain during slow drying, developing deep sweetness and aromatic complexity without losing cleanliness.
In the cup, Bekele Honey is clean and expressive, with notes of floral honey, bright bergamot, ripe plums and sweet grapes, accompanied by a refined acidity and a juicy finish.
