Berry Freeze is a washed Chiroso that breaks expectations.

Produced by Jorge Rojas at Finca El Proceso, this lot offers much more sweetness and texture than is normally expected from a washed coffee, while maintaining exceptional clarity.

After each harvest day, the cherries are carefully processed at La Roca (Planadas), where the focus on cleanliness and slow drying allows the floral and fruity profile to express itself with great precision.

The result is an elegant, refreshing, and extremely expressive coffee.

Process

Processed using the washed method, focused on clarity and sweetness:

Selection and flotation of ripe cherries
Pulping and overnight rest
Complete washing the next day
Slow drying in marquees (~15 days)

This process provides cleanliness and a very defined sweetness.

We select our coffees based on their unique cupping profiles and, of course, that they are 100% traceable. We partner with importers who share our values ​​and carefully roast each of our coffees to deliver the best flavors they have to offer.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
