The Cata Project – Seasonal Espresso (Vol. 8) is a special collaboration between Sweven Coffee and Cata Export, produced by Jhoan Vergara at Finca Las Flores, Huila, Colombia.

This lot is a single-vineyard Red Bourbon, a unique mutation with exceptional aromatic expression. The cherries are harvested at peak ripeness (28° Brix) and undergo an advanced process that includes:
-Initial heat shock
-60 hours of anaerobic fermentation
-12 hours of oxidation
-Second anaerobic fermentation of 24 hours
-Hot thermal shock at 55°C
-Controlled drying in a dehumidifier for 60 hours

This precise approach creates an intense and defined cup, with caramel sweetness and a creamy texture. It works brilliantly both on its own and with milk.
