Sidra is a relatively new Arabica coffee variety, but highly prized for its complex and elegant sensory profile. Although its exact origin remains a matter of study, it is believed to be a natural cross between Red Bourbon and Typica, developed and stabilized primarily in Ecuador. In recent years, its cultivation has expanded to other Latin American countries, where it has demonstrated excellent performance at high altitudes.

What distinguishes Cider is its sophistication in the cup. This variety is known for offering coffees with bright acidity, a silky body, and very defined floral and fruity profiles. It's not uncommon to find notes of vanilla, mandarin, jasmine, honey, and stone fruit, making it a favorite in competitions and among specialized baristas.

From an agronomic perspective, Sidra is a demanding variety to manage, requiring altitudes of at least 1,700 meters above sea level and specific care to reach its full potential. Its yield may not be as high as that of other commercial varieties, but it makes up for it with exceptional cup quality.
