Produced by Henry Bonilla in Pitalito (Huila), this lot comes from a family farm where tradition and experimentation go hand in hand. From a young age, Henry has worked the land, evolving towards advanced processes that today position his coffee among the most interesting in the region.
His approach is not limited to his farm — he also encourages other local producers to improve their practices and enter the world of specialty coffee.
The result is a vibrant coffee with a tropical profile and a very distinctive liqueur-like touch.
Process
Processed using multi-stage anaerobic natural methods, this coffee develops depth and complexity:
Selective harvesting of ripe cherries
Initial oxidation (24–36h)
Anaerobic fermentation in sealed tanks (60–72h)
Second controlled fermentation (~48h)
Drying on raised beds (18–25 days)
Stabilization for several weeks
This process creates an intense, structured profile with multiple aromatic layers.
