Description
This lot comes from Danche Washing Station in Chelbesa, Gedeb, one of Yirgacheffe's most prestigious areas for specialty coffee.
Processed by SNAP Specialty Coffee, this coffee gathers cherries from around 800 small producers who grow coffee between 2000 and 2300 meters above sea level. The high altitude and careful washed processing result in a transparent cup, marked by delicate floral notes and vibrant citrus acidity.
Process
Washed Process:
Slow fermentation of cherries for 45–60 hours in the shade.
Thorough washing to remove mucilage.
Drying on raised African beds for 7–10 days.
Careful drying control by covering during peak solar radiation hours.
