Description
This batch comes from the highlands of Mangshi, Dehong (Yunnan, China), grown between 1600 and 1800 meters above sea level and produced by Olina Caicai within the One Light Project.
The cherries are harvested at their optimal ripeness and undergo a 7-day anaerobic fermentation at 20°C, with the addition of a proprietary yeast strain that enhances the aromatic profile. Afterward, the coffee is washed with mountain water and slowly dried on raised beds for 15 to 30 days.
In the cup, it expresses a distinctly floral profile: dominant rose, accompanied by lychee, a touch of honey, and a delicate echo of oolong tea. The texture is silky, with medium acidity and an elegant structure.
A coffee that reflects the growing potential of Yunnan and the technical precision of the Olina Caicai team.
