Traceability

Jaguara is the name of Natália and André's farm, but also of their export company, which sources coffee from other producers in the region. They are one of our main suppliers in Brazil, with whom we have established a very close relationship through over the years.The Jaguara farm was initially founded by three friends, Antonio Wander, Rubem Carlos and Rubem Murilo. They planted their first coffee trees in 2001, in the Campo das Vertentes area. The farm received its name from an important quilombo community in the region. The farm is now owned by André Luíz Garcia, his wife, Natália Moreira Brito and their son, Benicio Garcia. André is the third generation of producers. He is an agronomist and researcher at the Procafé Foundation, specialized in pruning and coffee production. Natália is a second generation producer, taster and merchant. They work together to further develop their farm, supporting and complementing each other in different areas of production. They create a wide range of profiles by diversifying their fermentation and drying procedures. The Jaguara farm is located next to São João del Rei, a very historical city for the colonization of Brazil. The city is traditionally known for its gold mines and not for its coffee production. However, with its high-altitude mountains (by Brazilian standards), the area's coffee trees have adapted very well.

Description

Processed as long-fermented naturals, the cherries in this batch have been selectively hand-picked and have undergone 80 hours of fermentation. Drying takes place on a patio and in boxes with hot air. This coffee has been produced by Natália Brito & André Luíz Garcia, on their farm, Jaguara.

We select our coffees based on their unique cupping profiles and, of course, that they are 100% traceable. We partner with importers who share our values ​​and carefully roast each of our coffees to deliver the best flavors they have to offer.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
