Description

Coffeelipe is a coffee produced by Juan Felipe Restrepo in Caldas, Colombia, and is part of the fermentation experiments developed under his project of the same name.

Coffeelipe operates as a modern processing center, equipped with a laboratory, bioreactors, fermentation tanks, mechanical silos, and a greenhouse with two-level drying beds. From there, Felipe works with cherries from different farms and regions, developing fermentation protocols focused on improving clarity and consistency in the cup.

This project represents more than seven years of research, during which more than 1000 different cup profiles have been evaluated, seeking to understand how each variable of the process affects the final result of the coffee.

For this batch, the cherries are harvested at their optimal ripeness to ensure uniformity in the mass. Once at the processing station, the coffee undergoes a flotation process to remove defects and is then subjected to a short anaerobic fermentation of approximately 12 hours. Afterward, it is pulped and carefully washed to preserve the purity of the flavor profile.

Drying takes place on patios for approximately 24 days. During the first 15 days, the coffee is spread in thin layers to facilitate the initial release of moisture, while in the final days it continues to be gently moved to stabilize the water activity and protect the bean structure.

In the cup, this washed Pink Bourbon presents a clean and balanced profile, with notes of milk chocolate, stone fruits, citrus and a subtle floral character that brings elegance and complexity.
