Description

This batch of Sudan Rume, one of the rarest and most expressive varieties of specialty coffee, is grown at Finca La Riviera at an altitude of 1,750 meters in Santa Rosa de Cabal, Risaralda, under the direction of producer Julio Madrid and the Café UBA project.

Renowned for its natural complexity and exceptional aromatic potential, Sudan Rume finds a clean, luminous, and profoundly elegant expression in this process. After pulping, the coffee is fermented in a bioreactor with inoculation of selected indigenous yeasts (Kazachstania humilis), isolated directly on the farm. Fermentation is precisely controlled for approximately 48 hours, monitoring temperature and acidity to preserve the varietal character.

Once fermentation is complete, the coffee is washed and initially sun-dried to a moisture content of 40%. It is then placed in a dark room with controlled dehumidification, where the moisture content slowly decreases to a final level of 11%, ensuring stability, clarity, and definition in the cup.

The result is a refined and balanced coffee, where ripe apricot, bright citrus, and juicy peach stand out, accompanied by delicate floral notes of rose. The texture is silky, with natural sweetness and a medium acidity that provides structure without overshadowing the overall elegance.

This coffee was transported to Europe using 100% sail propulsion, reducing CO₂ emissions associated with maritime transport by up to 98%. A direct shipment, without transshipments, that preserves both the freshness and the project's environmental commitment.
