Description

Finca Milán – Vanilla Process is a luscious and carefully crafted expression of Colombian specialty coffee, produced by Julio Madrid within the Café UBA project, recognized for its innovative approach to controlled fermentations and unique sensory profiles.

This batch of Caturra coffee has been processed using the exclusive Culturing process, developed by Café UBA to explore new aromatic dimensions without sacrificing balance or elegance. In this method, the coffee undergoes a mixed fermentation with pineapple, vanilla, and sugarcane, combined with selected microbial cultures. The fermentation takes place in an oxygen-restricted environment for over 192 hours, allowing yeasts and bacteria to activate complex metabolic reactions that intensify the sweetness and creaminess of the coffee profile.

The result is a deeply comforting cup, where natural vanilla gently dominates, accompanied by creamy nougat and a delicate touch of cinnamon that adds warmth and lingering flavor. The texture is silky, with medium acidity and a well-rounded balance that makes this coffee an extremely versatile choice.

Roasted using the omni roast method, this coffee expresses itself with great clarity both in espresso, where its sweetness and body stand out, and in filter, where it becomes more elegant and aromatic, always maintaining its enveloping character.

As part of the project's environmental commitment, this coffee was transported to Europe aboard a cargo ship powered entirely by sail, reducing CO₂ emissions associated with maritime transport by up to 98%. A direct and responsible shipment that preserves the coffee's freshness and positive impact.
