Nestor Lasso's legendary Ombligon returns with one of its most intense and fruity profiles. Grown in El Diviso (Pitalito, Huila) at over 1,750 m, this lot stands out for its explosive, complex, and profoundly sweet character, the result of a natural anaerobic process taken to the limit with absolute precision.

The cherries, harvested at full ripeness, undergo a long oxidation phase: 48 hours outdoors, 12 hours of resting, and another 60 hours under controlled temperature (30–40°C). They then undergo 24 hours of anaerobic fermentation with must recirculation, intensifying the fruity nuances. A thermal shock at 60°C locks in the aromas before a combination of sun and dehumidifier drying.

The result is an ultra-sensory cup: strawberry and raspberry jam, vibrant acidity, and a peachy sweetness that envelops the entire experience. A bold, juicy, and complex coffee, typical of Nestor Lasso's experimental processes.
