This batch of Yellow Papaya comes from El Diviso, Huila, the result of a collaboration between Nestor Lasso and Cata Export.

Processed as Natural with assisted fermentation, it incorporates baker's yeast and the thermal shock technique, in a multi-stage protocol that intensifies sweetness, clarity and fruit expression.

Grown at 1850 meters above sea level, the cup profile is bright and deeply tropical:
