The Barrel Aged process used in Colombia San Sebastián is a unique method in which coffee beans, after being processed as washed coffee, are aged in wooden barrels. During this process, the beans absorb the flavors and aromas of the wood, which imparts complex and unique notes, such as orange, pineapple, Cuba Libre, and vanilla. Barrel aging also mellows the coffee's acidity, creating a cup with special depth and a characteristic tropical profile.
