Description
Description
Corazón de Jesús is a perfect example of the new generation of Costa Rican coffee.
Produced by the Alvarado Fonseca family in the Brunca region, this lot reflects how a historically undervalued area has evolved into a high-quality origin thanks to innovation and commitment.
From their micro-mill founded in 2015, the family works with a sustainable and collaborative approach, integrating environmentally responsible practices and participating in programs like Bandera Azul (Blue Flag).
The result is a modern, clean coffee with elegant complexity.
Process
Processed using a washed method with controlled lactic fermentation, this coffee offers greater complexity without losing clarity.
Selective harvesting of ripe cherries
Pulping on the same day
Fermentation in mucilage with natural microorganisms
Washing after reaching optimal pH
Slow drying on raised beds and patios
Resting in parchment for 6–8 weeks
This approach allows for the development of a clean profile with greater depth and sweetness.

About Three Marks Coffee
About Three Marks Coffee
Three Marks Coffee is a Spanish roastery and cafe located in the sunny city of Barcelona. It is the brainchild of three friends: Marco De Rebotti, Marco Pacca, and Marc Aguyé.
The idea to open their own cafe and roastery first originated in early 2018. Marco De Rebotti and Marc Aguyé had previously worked together at the equally well-known roastery Nømad Coffee. Marco Pacca joined them a little later, at that time working in an office just above Nømad Coffee. Marco now roasts for their own coffee shop and brand, Three Marks Coffee.
