La Isabela is an exceptional microlot produced by Max Salazar Rodríguez, a third-generation coffee farmer in Costa Rica's West Valley. Grown between 1,700 and 1,800 meters above sea level, this Sudan Rume benefits from a carefully managed environment, with native shade, combined fertilization, and harvesting during the dry season for optimal ripening.
This batch has undergone a Thermal Shock process, a technique that enhances fruit expression through precise temperature control after fermentation. The result is an intense, clean, and deeply aromatic cup.
On the palate, a tropical and juicy profile dominates, with layers of fresh strawberry, bright kiwi, mango, and ripe peach. The natural sweetness combines with a lively acidity and a silky texture that makes each sip vibrant and modern.
