Description

This Typica Black Wash comes from La Mesa, one of the plots of Monte Copey, in Santa María de Tarrazú, Costa Rica, and is produced by Enrique Navarro and his family, with whom Koppi Roasters has worked since 2010.

For this harvest, Enrique developed his own process called Black Wash. In this method, the cherries are pulped, removing the skin but leaving all the mucilage attached to the bean. The coffee then ferments for 48 hours in closed, temperature-controlled tanks until the beans darken in color. After this phase, they are rinsed with clean water and transferred to drying tables.

The result is a surprisingly clean cup, with a complex structure and an intense expression of ripe red fruit, combined with a well-defined tropical character. A coffee that demonstrates how ongoing innovation can amplify both clarity and depth.

Monte Copey is divided into five plots, and all the coffee is meticulously separated by lot, variety, harvest date, and processing method. Every week during the harvest, Enrique travels to San José to cup all the lots and adjust the processes based on the cup results. This constant attention to detail is one of the reasons why Monte Copey has established itself as one of the most solid projects in Costa Rica.
