Danche Washed is a coffee from Gedeb, in the Gedeo area (Ethiopia), produced by around 400 small farmers who grow coffee on plots of 1 to 2 hectares.

Grown between 1,950 and 2,000 meters above sea level, this coffee thrives in ideal high-altitude conditions, where the slow ripening of the cherries allows for the development of more complex, sweet, and aromatic profiles. The coffee plants are cultivated using traditional methods in organic farming systems, under shade, and in nutrient-rich soils.

The cherries are delivered to the Danche washing station, where they are carefully processed to preserve the quality of the batch.

Process

The coffee is processed using the washed method, with a prolonged fermentation of approximately 96 hours, which intensifies the complexity of the profile.

After fermentation, the coffee is washed in channels where it is also sorted by density, removing defective beans. It then undergoes a brief soak in water before being dried for about 10 days on raised African beds, with further manual sorting to ensure quality.

This process results in a clean, structured, and very expressive cup.

In the cup, Danche Washed offers a juicy and sweet profile, with notes of ripe yellow fruit, citrus, florals and honey, accompanied by a bright acidity and a smooth texture that makes it very easy to enjoy.
