Danche is one of the most emblematic coffees in the long-term relationship between SEY Coffee and its partners in Gedeb, Ethiopia.
Produced at the Danche station by Neguesse Debela, this lot represents years of work focused on quality, consistency, and continuous improvement. Grown at 2200 masl, it develops exceptional aromatic complexity thanks to the combination of extreme altitude and traditional Ethiopian varieties.
The result is a bright, floral, and extremely clean cup, reflecting SEY's approach: maximum transparency and expression of origin.
Process
Processed using the washed method, focused on purity and clarity:
Manual harvesting at peak ripeness
Float selection to remove defects
Pulping and Grade 1 classification by density
Fermentation underwater (~36h)
Drying on raised beds (10–14 days)
This process allows for a clean and precise expression of the Ethiopian terroir.
